  • 1 cup bread crumbs regular or panko
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 2 tablespoons olive oil

Instructions

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Wash the zucchini thoroughly and cut off the ends. Then, slice the zucchini lengthwise into thin strips, resembling the shape of fries.
