  • 2 medium-sized zucchini
  • 1 cup bread crumbs regular or panko
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Wash the zucchini thoroughly and cut off the ends. Then, slice the zucchini lengthwise into thin strips, resembling the shape of fries.
  • In a shallow bowl, beat the eggs until well mixed. In a separate bowl, combine the bread crumbs, grated Parmesan cheese, garlic powder, paprika, salt, and pepper.
  • Dip each zucchini strip into the beaten eggs, ensuring it is fully coated, and then roll it in the bread crumb mixture, pressing gently to adhere the crumbs.
  • Place the coated zucchini strips on the prepared baking sheet, leaving a little space between each strip.
