- Cook the Berries: Gently cooking the berries for about 5 minutes brings out their vibrant taste and color. As an added bonus, it also dissolves the sugar.
- Layer the Flavors: The sugar and lemon juice added to the cooked berries add brightness and enhance the fresh strawberry flavor in your ice cream.

If you need a lactose-free version, you’re in luck. Lactose-free thickened cream is widely available in Australian supermarkets. If lactose-free dairy isn’t available where you live, don’t worry.
You can make your own lactose-free thickened cream (follow the first step of my recipe and don’t whip the cream). Once you have your lactose-free cream and condensed milk ready, proceed with the recipe as usual to enjoy rich, creamy, lactose-free strawberry ice cream.
Can You Make Ninja Creami Vegan Strawberry Ice Cream?
Absolutely! I made this recipe using Flora Plant thickened cream, and it turned out beautifully. The texture was arguably even better than with traditional cream, thanks to the gums in the vegan cream. The plant-based cream tasted just like regular cream—no odd flavors.
In Australia, I could only find Flora thickened cream in Tetra Pak, which contains 31g of fat per 100ml. The Flora double cream available in the UK has the same fat content, so it should work just as well. Flora Plant Cream also seems to be available in the US, but perhaps only in specialty stores. Another alternative I found is Country Crock, which has 30g of fat per 100ml, making it comparable to the cream I used.
This recipe is flexible enough for a bit of experimentation with different cream alternatives. While I haven’t tried them yet, coconut cream or coconut yogurt might work. Keep in mind that these will alter the flavor and possibly the texture. If I test these alternatives, I’ll update the recipe.

Ninja Creami Strawberry Ice Cream
Ingredients
For the Strawberry Ice Cream:
- 900 g fresh strawberries about 350-400g after hulling
- 375 g white sugar caster sugar or any white sugar
- 60-120 ml lemon juice 1-2 tablespoons, to taste
- 375 g thickened cream 30-35% milk fat; heavy cream or whipping cream
Optional Flavor Boosters:
- Tiny pinch of salt
- 1.5 teaspoons vanilla bean paste or extract
- 6 cracks of fresh black pepper see the main post for details
Instructions
- Slice the washed and hulled strawberries and place them in a medium pot with sugar and lemon juice. Cook over low to medium heat until the strawberries break down and the mixture turns bright red. Mash the strawberries with a fork, then let the mixture cool. Stir in any optional flavor boosters if using.
- Once cooled to a comfortable temperature, stir in the cream. Adding cream while the mixture is too hot may curdle it, so ensure it’s cool enough.
- Pour the mixture into the Ninja Creami 470ml tub, just below the fill line. Freeze for 24 hours with the lid off.
- Process the frozen mixture using the Ninja Creami’s ice cream function. Store any leftovers with the lid on in the fridge. The ice cream typically does not need re-processing; just let it soften at room temperature before serving.
