Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 can black beans rinsed and drained
  • 1 cup corn kernels canned or fresh
  • 1 red bell pepper diced
  • 1 avocado sliced
  • 1 tomato diced
  • Lettuce Romaine or mixed greens, for serving

Lime Cilantro Dressing

  • ¼ cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey or maple syrup for a vegan option
  • 2 tablespoons chopped fresh cilantro
  • 1 garlic clove minced
  • Salt and pepper to taste

Instructions
 

  • Preheat your grill or stovetop grill pan over medium-high heat.
  • Season the chicken breasts with cumin, chili powder, garlic powder, paprika, salt, and pepper. Make sure both sides are evenly coated.
  • Grill the chicken for about 6-8 minutes per side, or until cooked through. The internal temperature should reach 165°F (74°C). Set aside and let it rest for a few minutes before slicing into thin strips.
  • In a large salad bowl, combine the black beans, corn, diced red bell pepper, avocado slices, and diced tomato.
  • In a small bowl, whisk together the lime juice, olive oil, honey or maple syrup, chopped cilantro, minced garlic, salt, and pepper to make the lime cilantro dressing.
  • Add the sliced chicken to the salad bowl and drizzle the lime cilantro dressing over the ingredients.
  • Gently toss everything together until all the ingredients are well coated with the dressing.
  • Serve the Southwest chicken salad on a bed of lettuce.
