Instructions
Preheat the oven to 375°F (190°C) and lightly grease a mini muffin pan or line with silicone cups.
In a medium bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
In a separate bowl, mix the milk, egg, vanilla extract, and melted butter until combined.
Add the wet ingredients to the dry ingredients and stir until just mixed.
Gently fold in the blueberries, being careful not to overmix.
Spoon the batter into the prepared muffin cups, filling each about 3/4 full.
Bake for 12–15 minutes, or until lightly golden and a toothpick inserted comes out clean.
Let the fritter bites cool for 5 minutes before serving or glazing.
Notes
For best results, do not overmix the batter. Frozen blueberries can be used without thawing.
