Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon optional
  • 1/3 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter melted
  • 3/4 cup blueberries

Instructions

  • Preheat the oven to 375°F (190°C) and lightly grease a mini muffin pan or line with silicone cups.
  • In a medium bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  • In a separate bowl, mix the milk, egg, vanilla extract, and melted butter until combined.
  • Add the wet ingredients to the dry ingredients and stir until just mixed.
  • Gently fold in the blueberries, being careful not to overmix.
  • Spoon the batter into the prepared muffin cups, filling each about 3/4 full.
  • Bake for 12–15 minutes, or until lightly golden and a toothpick inserted comes out clean.
  • Let the fritter bites cool for 5 minutes before serving or glazing.

Notes

For best results, do not overmix the batter. Frozen blueberries can be used without thawing.
