Ingredients

  • 2 ripe bananas mashed
  • 1 ½ cups rolled oats
  • ¼ cup chocolate chips optional
  • ½ teaspoon cinnamon optional
  • 1 teaspoon vanilla extract optional

Instructions

  • Preheat the oven to 350°F (180°C) and line a baking tray with parchment paper.
  • In a bowl, mash the ripe bananas until smooth.
  • Add the oats and mix until fully combined.
  • Stir in chocolate chips or optional ingredients if using.
  • Scoop the mixture onto the baking tray and gently flatten.
  • Bake for 12–15 minutes until set and lightly golden.
  • Let cool slightly before serving.

Notes

Use very ripe bananas for the best natural sweetness. These banana oat cookies are meant to be soft, not crispy. Store leftovers in an airtight container in the refrigerator for up to 5 days.
