- 2 cups all-purpose flour
- 1 cup shredded coconut
- 1 cup coconut milk
- 2/3 cup sugar
- 2 large eggs
- 1/3 cup melted butter or coconut oil
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
Mix dry ingredients (flour, shredded coconut, baking powder, baking soda, salt).
In another bowl, beat eggs, sugar, butter, and vanilla extract.
Add coconut milk, then fold in dry ingredients.
Pour batter into the loaf pan.
Bake for 50-55 minutes.
