- 1 cup pitted dates chopped
- 1 cup boiling water
- 1 tsp baking soda
- 1/2 cup butter softened
- 3/4 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 3/4 cups all-purpose flour
- 1/2 tsp salt
- 1 tsp baking powder
- 1 cup chopped nuts walnuts or pecans
Pour boiling water over chopped dates and baking soda; let sit.
Cream butter and sugar, add eggs, and mix.
Combine dry ingredients, then fold in the dates and nuts.
Pour into a loaf pan and bake at 350°F for 60-70 minutes.
