Ingredients

  • 4 large potatoes peeled and grated
  • 1 onion finely chopped
  • 1 bell pepper finely chopped
  • 1 carrot peeled and grated
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1 teaspoon chives chopped
  • 2 eggs beaten
  • 1 cup milk
  • 1/2 cup wholemeal flour
  • 1 teaspoon baking powder
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat the oven to 200°C (400°F) and grease a baking dish with olive oil.
  • Grate the potatoes and place them in a large bowl.
  • Chop the onion, bell pepper, and carrot, adding them to the bowl with potatoes.
  • Heat olive oil in a pan over medium heat. Add the grated vegetables and sauté for 5-7 minutes until softened. Season with salt and stir in chopped chives.
  • In a separate bowl, whisk the eggs and milk together. Add the flour and baking powder, mixing until smooth.
  • Combine the sautéed vegetable mixture with the batter and stir well.
  • Pour the mixture into the prepared baking dish and spread it out evenly.
  • Bake for 45 minutes or until golden brown and set.
  • Sprinkle shredded cheddar cheese on top and bake for an additional 15 minutes, until the cheese is melted and bubbly.
