Ingredients

  • 1.5 pounds of boneless skinless chicken breasts
  • 2 tablespoons of olive oil
  • 1 large onion thinly sliced
  • 3 bell peppers red, green, and yellow, thinly sliced
  • 3 cloves of garlic minced
  • 1 cup of chicken broth
  • 2 tablespoons of fajita seasoning store-bought or homemade
  • Juice of 1 lime
  • Tortillas flour or corn
  • Optional toppings: shredded cheese sour cream, guacamole, salsa, fresh cilantro

Instructions

Prepare the Ingredients:

  • Slice the chicken breasts into thin strips, approximately 1/4 inch thick.
  • Thinly slice the onion and bell peppers.
  • Mince the garlic.

Sauté the Vegetables:

  • Turn the Instant Pot to the sauté setting and add the olive oil.
  • Once the oil is hot, add the onions and garlic, sautéing for about 2-3 minutes until fragrant and translucent.
  • Add the bell peppers and continue to sauté for another 3-4 minutes.

Add the Chicken and Seasonings:

  • Add the sliced chicken to the Instant Pot, spreading it evenly over the sautéed vegetables.
  • Sprinkle the fajita seasoning over the chicken and vegetables.
  • Pour in the chicken broth and lime juice, ensuring the liquid covers the bottom of the pot to prevent burning.

Pressure Cook:

  • Secure the lid on the Instant Pot and set the valve to the sealing position.
  • Select the manual or pressure cook setting and set the timer for 7 minutes.
  • Once the cooking time is complete, allow the pressure to release naturally for about 10 minutes before performing a quick release.

Assemble the Fajitas:

  • Carefully remove the lid of the Instant Pot and stir the chicken and vegetables.
  • Use a slotted spoon to transfer the chicken and vegetables to a serving dish, leaving behind any excess liquid.
  • Warm the tortillas in a dry skillet or microwave.
  • To assemble the fajitas, place a generous spoonful of the chicken and vegetable mixture onto each tortilla.
  • Add your favorite toppings such as shredded cheese, sour cream, guacamole, salsa, and fresh cilantro.

Serve and Enjoy:

  • Serve the Instant Pot chicken fajitas immediately while they are hot and fresh.

Notes

Using Fresh Ingredients: Opt for fresh, high-quality ingredients to enhance the flavor of your fajitas. Consider using organic chicken and vegetables for the best taste and nutritional value.
Homemade Fajita Seasoning: Making your own fajita seasoning allows you to control the flavors and avoid unnecessary additives. A simple blend can include chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper.
Avoid Overcrowding the Pot: Ensure the chicken and vegetables are evenly distributed in the Instant Pot to promote even cooking. Overcrowding can result in unevenly cooked ingredients.
Natural Pressure Release: Allowing the pressure to release naturally for 10 minutes helps retain the moisture and tenderness of the chicken. This step is crucial for achieving the best texture in your fajitas.
Customizing Your Fajitas: Feel free to adjust the recipe to suit your taste. Add a dash of hot sauce for extra spice, or include additional vegetables like mushrooms or zucchini for more variety.
Serving Suggestions: Serve the chicken fajitas with Mexican rice, black beans, corn salad, or a simple green salad for a complete meal. Tortilla chips with guacamole or salsa also make excellent accompaniments.
Storing Leftovers: Store any leftover chicken and vegetables in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave before serving.
Freezing Instructions: You can freeze the cooked chicken and vegetable mixture for up to 3 months. Allow it to cool completely before transferring to a freezer-safe container. Thaw in the refrigerator overnight and reheat before serving.
Using Frozen Chicken: If using frozen chicken, increase the cooking time to 12 minutes. Ensure the chicken reaches an internal temperature of 165°F for safe consumption.
Making Ahead: This recipe can be made ahead of time and stored for quick meals during the week. Simply reheat and assemble the fajitas when ready to serve.
