Ingredients

Key Lime Cake:

  • 1 cup canola or olive oil
  • 3 large eggs
  • 1 1/3 cups whole milk
  • 2 tablespoons fresh lime zest
  • 1 tablespoon fresh lime juice
  • 2 cups sugar
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt

Lime Cream Cheese Frosting:

  • 1/2 cup butter softened
  • 8 ounces cream cheese softened
  • 4 to 4 1/2 cups powdered sugar
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon fresh lime zest
  • Fresh lime slices for garnish

Instructions

  • Preheat the oven to 325°F (165°C).
  • In a large mixing bowl, combine the oil, eggs, whole milk, lime zest, and lime juice. Beat the mixture for 2 minutes until smooth.
  • In a separate bowl, mix together the sugar, flour, baking powder, baking soda, and salt. Gradually fold this into the egg mixture.
  • Grease two 9-inch or three 8-inch cake pans with nonstick spray. Pour the batter evenly into the prepared pans.
  • If using three 8-inch pans, bake for 20-26 minutes or until a toothpick inserted in the center comes out clean. For two 9-inch pans, bake for 30-36 minutes.
  • Let the cakes cool completely before frosting.

Notes

To make Lime Cream Cheese Frosting:
In a large bowl, beat the butter and cream cheese together for 4-5 minutes until light and fluffy, making sure to scrape the sides of the bowl frequently. Gradually add the powdered sugar, lime juice, and lime zest, mixing until smooth. Chill the frosting for a while to firm up.
Once the cakes have cooled completely, remove them from the pans. Spread a layer of frosting on top of one cake. Place the second cake layer on top and frost the entire cake. Garnish with fresh lime slices.
