Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted

For the Custard:

  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 ripe bananas sliced

For the Topping:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Additional sliced bananas for garnish

Instructions

  • Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand and holds together when pressed. Press the mixture firmly into the bottom of a 9×9 inch baking dish or pie dish. Refrigerate while you prepare the custard.
  • Make the Custard: In a medium saucepan, heat the milk over medium heat until it just begins to simmer. In a separate bowl, whisk together the granulated sugar, cornstarch, and egg yolks until smooth and pale yellow in color. Gradually pour the hot milk into the egg mixture, whisking constantly to prevent the eggs from scrambling.
  • Cook the Custard: Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the custard thickens and coats the back of a spoon, about 5-7 minutes. Remove from heat and stir in the vanilla extract. Let the custard cool slightly.
  • Assemble the Layers: Arrange the sliced bananas evenly over the graham cracker crust. Pour the warm custard over the bananas, spreading it into an even layer with a spatula. Cover the dish with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming. Refrigerate for at least 2 hours, or until set.
  • Whip the Cream: In a chilled mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread the whipped cream over the chilled custard layer.
  • Garnish and Serve: Top the whipped cream layer with additional sliced bananas for garnish, if desired. Slice into squares or wedges and serve chilled.
