Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine 1 cup of peanut butter and 1 cup of granulated sugar. Mix until the mixture is smooth and creamy.
Add 1 large egg and 1 teaspoon of vanilla extract to the peanut butter-sugar mixture. Mix until everything is well incorporated.
In a separate bowl, combine 1/2 teaspoon of baking soda and a pinch of salt. Gradually add this mixture to the peanut butter mixture, stirring until a cookie dough forms.
Use your hands to shape the dough into small balls and place them on the prepared baking sheet, leaving some space between each cookie.
Use a fork to flatten each cookie and create a crisscross pattern on top.
Bake in the preheated oven for 10-12 minutes or until the edges turn golden brown.
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
