Ingredients

  • 500 g 17.6 oz peanuts
  • 100 g 3.5 ounces oat flakes
  • 4 tablespoons peanut butter
  • 3 tablespoons maple syrup
  • 1 tablespoon coconut oil
  • 50 g 1.7 oz dark chocolate (without sugar)

Instructions

  • Prep Peanuts: Roast the peanuts in a dry skillet over medium heat until they are lightly browned and fragrant. Remove from heat and let them cool.
  • Blend Peanuts: In a food processor, pulse the roasted peanuts until they form a coarse meal.
  • Combine Ingredients: In a mixing bowl, combine the ground peanuts, oat flakes, peanut butter, maple syrup, and coconut oil. Mix well until a sticky dough forms.
  • Shape Desserts: Shape the dough into small energy balls or bars and place them on a parchment-lined baking sheet.
  • Melt Chocolate: Melt the dark chocolate in a heatproof bowl over a pot of simmering water or in the microwave.
  • Coat with Chocolate: Dip each energy ball or bar into the melted chocolate, coating them halfway or drizzling chocolate over the top.
  • Chill: Place the coated energy desserts in the refrigerator for about 30 minutes, or until the chocolate sets.
  • Serve: Once set, remove from the refrigerator and serve. Enjoy your energy desserts with peanut butter!
