- 8 oz almond paste
- ½ cup granulated sugar
- 2 large egg whites
- 1 cup pine nuts
- 1 tsp vanilla extract optional
- Zest of 1 lemon optional
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, combine almond paste, sugar, and egg whites until smooth.
Form small dough balls and roll them in pine nuts.
Place on the baking sheet and bake for 12-15 minutes until golden.
Let the cookies cool before serving.
