Ingredients

  • 1 block of cream cheese 8 oz
  • 1-2 tablespoons olive oil
  • 2 tablespoons of your favorite BBQ rub or a mix of smoked paprika, garlic powder, onion powder, black pepper, and a pinch of brown sugar
  • Crackers bread, or veggies for serving

Optional Toppings:

  • Chopped chives or green onions
  • Honey drizzle
  • Jalapeños sliced
  • Bacon crumbles
  • Smoked nuts for garnish

Instructions

Prep the Cream Cheese:

  • Start with a cold block of cream cheese. Leave it in the packaging until you're ready to smoke, as this will help it hold its shape.

Score the Top:

  • Using a sharp knife, score the top of the cream cheese in a criss-cross pattern. This helps the rub stick better and allows more smoke flavor to penetrate.

Coat the Cream Cheese:

  • Brush the cream cheese lightly with olive oil. This helps the BBQ rub adhere. Sprinkle the BBQ rub generously all over the cream cheese, making sure to coat all sides.

Preheat the Smoker:

  • Set your smoker to 180°F - 200°F (82°C - 93°C). Use a mild wood for smoking like apple, cherry, or pecan for a subtle flavor that complements the cream cheese.

Smoke the Cream Cheese:

  • Place the seasoned cream cheese directly on the smoker grate or on a piece of foil for about 2 hours. The cream cheese will develop a golden-brown crust and absorb the smoky flavors.

Optional Toppings:

  • Once smoked, you can top it with a drizzle of honey, jalapeño slices, chopped herbs, or crispy bacon crumbles to add extra flavor and texture.

Serve:

  • Serve the smoked cream cheese warm with crackers, bread, or vegetables. It’s a delicious dip!
