Preheat oven to 190°C. Lightly grease a baking sheet with cooking spray.
In a bowl, mix meat with onion, garlic, salt and pepper, all spices and breadcrumbs.
Make 2 sausages, making sure to wet your hands slightly so they don’t stick. Place the two sausage mixture in the refrigerator for 10-20 minutes.
Roll out the puff pastry and cut into two rectangles the same size as the sausage mixture. You can put them in the fridge for a few minutes to make them easier to process. Now place the sausage mixture on one side of the dough. Begin folding the dough over the meat filling.
Brush the edges of the dough with egg yolk and roll out until finished.
Squeeze the roll to make a better seal. Repeat with the other sausage mixture, then refrigerate for 10 minutes.
Cut into slices, brush with remaining egg yolk and sprinkle with sesame seeds if using.
Place the rolls, seam side down, in the baking pan and bake for 30 minutes or until golden brown.
Once cooked, remove from the oven and allow to cool for a few minutes
