Ingredients for Veggie Lo Mein

Here are the basic ingredients for my Veggie Lo Mein. Feel free to add more veggies like fresh ginger, cabbage, bok choy, baby corn, mushrooms, or even jalapeños for extra flavor. Basically, these are the components I can’t live without:

  • Lo Mein Noodles: Most grocery stores carry lo mein noodles in the Asian aisle. These wheat and egg-based noodles can be found dried or fresh. Additionally, if you’re lucky, you might find fresh lo mein noodles in the refrigerated section, sometimes in the produce aisle, sometimes in the Asian aisle.
  • Broccoli: Broccoli absorbs the flavors of the lo mein sauce beautifully, making it a staple in Chinese cooking.
  • Bell Peppers: Sweet red bell peppers add a wonderful flavor and a great pop of color to this dish.
  • Onion: Use yellow or white onions for this dish.

  • 1/4 cup of vegetable broth
  • 3 tablespoons of soy sauce
  • 2 tablespoons of brown sugar
  • 1 tablespoon of sesame oil


  • 8 ounces of lo mein noodles cooked according to package instructions
  • 1 large carrot julienned
  • 1 cup of chopped broccoli
  • 1 large red bell pepper sliced
  • 1 medium onion sliced
  • 4 garlic cloves
  • 1 tablespoon of oil for frying



  • In a bowl, combine broth, brown sugar, sesame oil, and soy sauce. Whisk until everything is well combined. Set aside.


  • In a preheated skillet with oil, fry carrots until golden brown. Remove and set aside. Repeat this process with onions, broccoli, and bell peppers. Cooking the vegetables separately enhances their flavors.
  • Add all the vegetables back to the skillet. Press garlic into the vegetables and toss everything together.
  • Next, add the lo mein noodles and sauce. Toss everything together and let the lo mein cook for 3-5 minutes.
  • Remove from the heat and serve immediately.
